CHEESE QUALITY.
■ (To the Editor.) . Sir,—At the annual meeting of th? Rawera Dairy Company the chairman, Mr. Corrigan, says he is certain the. quality of the cheese has slipped back owiii'T* to the abuse of standardisation, and the race for yield, yet. at the last meeting of the federation of factories' this sarne gentleman pulls.the wool over the eyes of a number of the delegates present by.blaming everybody bar themselves. Why don’t Messrs. Corrigan, Winks and Co. own up that a genuine effort has not been made '.to raise the quality of our cheese? This is quite obvious from. the remarks of the chairman of the Hawera Dairy Company, and apparently the race for yield, has been considered far more than the 'race for quality. , . Mr."Corrigan, at .the last meeting of the federation of factories, claims tiiat tins institution has solved more problems than anyone else. With all due respect to the chemist, I would ji’yt like to know what the laboratory has really done for South Taranaki, as they appear to bo in a worse predicament than other districts which have neither a federation nor a laboratory. —I am, etc., CHEDDAR.
