Sir, —i n the' past it has been said that New Zealand produce was not sufficiently advertised, bitt I am sure all will agree that our cheese has been brought into great prominence during the past month or two. We have got just exactly what we were asking for. The position so far as I see it is this: For some years at certain periods of the season ‘quite a number of us were skimming a small quantity of .whole milk and returning the skim milk to the vats. Now to put us on eide by Act of Parliament it wae made legal for us to add ekim milk. We have never at any time cither by circular 01 verbally been advised by any Government official to add excessive quantities of skim m'lk— always the reverse. On the other hand the federation’s chemist, especially since the Tokaora test, has considered our milk far too high testing for cheese-making, and has been, a keen advocate for this standardising process, and quite recently prepared tables to facilitate matters for us to skim down to the lowest fraction. ; • 'Mr. Veale a year or two back was very keen on putting our cheese into vacuum containers. If last season’s' stuff had beeil put into tins—enough •said. What a sorry mess! When the idea of setting up a laboratory in. Hawera was first thought of it was .largely because of non-acid milk and mottled' colour developing in our cheese. I As it is now some years since Mr. Veale started in Ha worn we would like to. hear how he is progressing wAh the elimination of these two bugs? Now,'since it lias been decided to pay. a premium for good cheese and as I am to make the best quality, I would be pleased if Mr. Veale would, assist..me.with the.following: (1) What percentage of fat am I to .aim for in the dry matter? (2) Would you. advise me to wax my cheese? Re the grading of our stuff, I do know that it is the points. allotted on thegrade note , and the graders’. remarks at the bottom that keep us up to the mark- and assist us to strive for a uniform article. —I am, etc., - another FACTORY MANAGER.
