IMPROVING QUALITY.

I As was to be expected from those who are in charge of the actual manufacture of cheese, the conference of Taranaki dairy factory managers supports the conclusions arrived at by the scientist in regard to the need for improvement in so important an item of the country’s products. Though possibly by different reasoning, the managers arrive at the same conclusion, namely, that a better raw material and improved methods of manufacture are required. As practical men they see that to attain these desirable aims there must be an inducement to the supplier to send milk to the factory in better condition, and that the factory manager must be allowed to improve quality rather than yield. It is all a question of pounds, shillings and pence. The conference urged universal grading of milk, with payment according to quality, and considered that this would of itself cure many of the evils associated with present supplies. It is obvious that it is not fair to the careful farmei’ who supplies the best quality milk that he should receive no more than the supplier who brings inferior material to the factory, but unless the rule of payment according to quality becomes universal in its application competition between factories may defeat the object in view. As regards a smaller yield to bring about a better quality output, it should not be.difficult to convince suppliers that they will assuredly lose more by exporting indifferent cheese than will be made up by an increased yield made possible by undesirable methods of manufacture. It is understood that fresh legislation in regard to dairy factories is under consideration. The views of managers will receive full consideration from the authorities, and it is good for the industry that they have ranged themselves solidly behind the proposals for necessary reforms.
