CHANGE TARTLETS. A GOOD LUNCHEON SWEET. Line some small tartlet :pans with good short pastry. Select ; two firm, sweet oranges; peel them as thinly as possible and chop the peel finely. Cream three ounces of butter with three ounces of castor sugar; beat in, separately, the yolks of three eggs; add two tablespoonsful of the juice of the oranges and the chopped rind, together with vanilla essence to flavour. Whisk the whites of the eggs until : frothy, and fold them lightly into the other ingredients. Divide this mixture into the tartlet cases and bake for fifteen or twenty minutes in a moderate oven. When three-parts cooked, dredge the tartlets with castor sugar.

A DINNER-TIME SAVOURY.

VERY SIMPLE TO PREPARE.

Hard-boil two or three eggs; shell them and chop them finely. Skin three wood-sized ripe tomatoes, chop the pulp and add to the eggs. Mix well, adding pepper and salt to taste. Melt a tablespoonful of butter in a pan, put in the ea«r mixture and stir for a few minutes until thoroughly heated through. Make small rounds of. hot buttered toast, pile the mixture upon them and serve at once.

OXTAIL CL xuiY.

Divide an oxtail at the joints and put into a saucepan with three pints of water and a bunch of sweet herbs, and. simmer four hours. . Let the broth cool and skim it well, then take out the tail and strain the liquor into a basin. Cut two large sour apples and . one onion into very small pieces, and stir in a pan with an ounce of butter, over the fire, until browned. Add a little salt to taste, and add to one pint of the broth one dessertspoonful of the best curry powder. Stir over the fire for 20 miutes, then thicken with one tablespoqnful of flour. Boil for two minutes, and put in the tail again, and squeeze, in half the. juice of a lemon, and give it just a boil up. Serve with rice in a separate dish. If a hot curry is liked, add more of the curry powder.

MACARONI AND KIDNEYS.

Ingredients: Goz macaroni, 3oz butter, 3oz grated cheese, 4 sheep’s kidneys, 1 small eschalot, loz-flour, l .pint of stock or water, salt, half teaspoonful of mixed mustard. '' Wash tiie kidneys thoroughly, skin and slice into small pieces. Melt, half the butter and fry the pieces of kidney on both sides. Remove from the pan and fry the eschallot until it is golden brown, add the flour and the mustard and pour on either the water or the stock. Bring to the boil and add the kidneys and salt.. Simmer gently for 40 minutes.

Meanwhile, simmer the macaroni in salted water until thoroughly cooked and strain. Stir in the butter and cheese, and make a border of macaroni. Pour the etewed kidneys and gravy into the centre of the border.

A WAY WITH FISH REMAINS.

Remove the skin and bone, from a cold cooked white fish; break up with, a fork, and stir Gox of it into a mixture as follows: Beat together 3 eggs and a pint of milk; season with pepper, a verylittle salt, grated nutmeg and anchovyessence to taste. When all the ingredients are well blended, turn into a buttered pie dish, and bake in a moderate oven until set to a custard.

WHEN SOUP IS SALT.

Soup which is too salt can be made thoroughly palatable if a few slices of raw potato are boiled in it for several minutes.

APPLE TARTLETS.

Line fair-siz.»d patty-tins with short crust. Over the bottom arrange very thinly sliced “quarters” of cooking apples, overlapping each other. Sprinkle over a good coating of soft brown cooking sugar. Brush the pastry border with a little milk or beaten white of egg, and bake in a rather brisk oven.

COMPLEXION AIDS.

Certain simple “wash-bowl” beauty aids are excellent for keeping the skin in good condition without encroaching too much on valuable time.

A pale, sallow skin, for instance, may be greatly improved by means of a generous supply of rice-water. Simmer a good tablespoonful of rice in a quart of water (soft water for preference) for about half an hour over gentle heat. Strain, bottle for use, and bathe the face each ■ morning and evening with, ft little of the lotion. If you use it with plain water for Washing, the face, take an equal quantity of each,, and do not 'use soap. For generally toning up a pale skin, removing blemishes, and imparting a delicate pink tingle, ricewater is invaluable. Bi-carbonate of soda should figure generously' in the sports girl’s toilet. Put as much as will lie.on a threepennypiece into a bowl of boiling water and steam the face over it. Now add two [ drops of tincture of benzoin and bath® the face when the water is sufficiently cool; rinse in cold soft water, and finally pat the skin dry without rubbing it.
