BUTTER SCOTCH. With a little caie you can make delicious butter Scotch, but as it is better not to stir this mixture while it is cooking, you must be very careful to see that it does not burn. Never go away and leave it; watch all the time. Put two cupeful of white sugar in a saucepan with one cupful of eoid water, a piece of butter the <flze of the cup you are measuring with, ’two teaspoonsful of vinegar, and half a tablespoonful of vanilla flavouring. Bring these ingredients to the boil stirring occasionally; then allow the mixture to boil without stirring, until a little tried in cold water hardens at once.
