GINGER COOKIES. Here is a simple way to make “cookies,” of which our American cousins are very fond. Take a small tea cup for a measure, and put into a saucepan one cupful of castor sugar, one of golden syrup, and half a cup of butter. Melt these ingredients over a slow fire; then remove the saucepan and sift in the two cupsful of flour and a tablespoonful of ground ginger. Mix well, and if the paste is too stiff to handle add a very little milk. Roll this paste out quickly' on a floured board, cut it into biscuits, place on well greased tins, and bake for about ten minutes. Our friends from over the water cut their cookies into queer shapes—pigs, ducks, rabbits, stars, moons! You might do the same.
