PEAR CUSTARD
Six pears, four eggs, two tablespoons of sugar, one cup flour, one lemon, half cup cream or milk, half-teaspoon baking powder. Peel and slice pears, place in layers in a piedish, and sprinkle with sugar; beat butter and sugar, add yolks of eggs well beaten, then milk and lemon juice, and lastly flour and baking powder. Pour this over the pears, and put in the oven to bake. Beat the whites of eggs to a stiff froth, pile on top of the pears, and brown a pale colour.
