THE TESTING OF MILK FOR CHEESE-MAKING'. 1 At the Broadway Buildings hoard room yesterday afternoon, Mr P. 0. Veale, scientist, at the Hawera Laboratory of the Dairy Factory Federation, delivered an address on the testing of milk for cheese-making. In the unavoidable absence of the * chairman of the Federation, Mr Winks, the chair was taken by Mr J. B. Richards. Mr Richards said that one of the chief things in the dairying industry was to eliminate waste, and to that end it was necessary to have a scientific investigator such as' Mr Veale.

Mr Veale dealt exhaustively with a number of tests, and indicated clearly their value or otherwise as regards their use in the factory. A full report of his remarks will appear in Monday’s issue. In the course ttf his remarks Mr Veale said he felt sure the time was coming when there would be grading of milk into three grades. It was not likely that precipitate action would be taken, but it was a step in the right direction. Fo agreed with Mr Veale to this extent as regard-- grading of milk—♦ho necessity for it existed. But before they committed themselves to any action they must he sure that (be method put into operation was reliable and fair. A vote of thanks to Mr Veale was carried by acclamation.
