OLD-FASHIONED GINGER CAKE

Cream Aoz butter well, gradually add 4oz sugar, and beat until light and fluffy. Add 3 egg-yolks, one at a time, beating well after each egg is added. Add a few drops lemon essence. Sift together 6oz plain flour, 1 level teaspoon baking powder, a pinch baking soda, and £oz ground ginger. Add it alternately to butter mixture ivith J gill milk. Put mixture in a well-lined cake tin, brush over lightly with water or milk, sprinkle with castor sugar, and bake for about 45 minutes in a moderate oven.
