TEKOA FROM TIMARU DUE HERE DECEMBER 1 The Federal liner Tekoa, at present discharging Liverpool cargo at Dunedin, will sail tomorrow for Timaru tC> complete. From Timaru, the Tekoa will proceed to Bluff, where she is due on December 1 to begin Homeward loading. The schooner Britannia sailed for Dog Island yesterday morning with mail and returned before midday. i The motor-vessel Tamatea sailed yesterday morning with passengers, mail and general cargo for Stewart Island and returned the same afternoon. The M.-A.-N.Z. Line motor-ship Kaimata finished loading general cargo, including wool and tallow, yesterday and sailed in the afternoon for Timaru. The Union Company’s coastal trader Waipiata is due at Dunedin today and sails the same day for Bluff, where she is due on Sunday. From Bluff she proceeds again to Dunedin. The Union Company advises that the M.-A.-N.Z. Line motor-ship Port Halifax will sail from Halifax on February 10 for Auckland, Wellington, Lyttelton. Dunedin' and Bluff. She will sail the same day for the north. From Hobart, the Union Company’s intercolonial freighter Karetu is now expected to reach Bluff on Sunday. She will sail probably the next day to continue discharge of her Australian cargo at Dunedin. '' ' I CATERING FACILITIES LATEST APPLIANCES ON DOMINION MONARCH People who travef on passenger vessels take a keen interest in the catering facilities. The pantries and kitchens on the Dominion Monarch, which will run .from Southampton via South African and Australian ports to New Zealand, are fitted with the latest appliances. The pantries are situated immediately above the main pantry on C deck. An electric lift ensures perfect service and works in conjunction with the telephone installation throughout the passenger accommodation. This will enable passengers to order direct, thus saving an incredible amount of time when asking for service. The main pantry has a room on the port side set apart for the washing of plates and so on. There is installed the latest plate-washing machine which is capable, with practically no handling of plates, cups and saucers, of washing and drying as many as 3000 pieces an hour.

Adjoining this room is a room racked for the storage of electro plate. An outstanding feature of this room is the silver burnishing machine, where silver, both large and small, is placed in a revolving cyclinder filled with steel shot. This ensures the plateware always preserving a brilliant surface, free from scratches, and so on. On the starboard side there is the chief steward’s office where the service clerk is in telephone communication with every cabin and every part of the ship. It is from this centre that orders of all varieties are transmitted to the various service pantries.

Adjoining the chief steward's office is the fruit and salad preparation rooms, where the latest models of fruit juice extractors and slicers have been installed. The main pantry is fitted with electrical heating hot presses, bain maries, toasters, griddle plates, waffle makers and coffee percolators. For special orders there is also an electrical cooking range, an electrical grill and salamander. The pantry is arranged to give perfect service without rush or delay. In the centre of the kitchen a “Comhill” electrical range with five ovens on each side will give ample cooking accommodation for the 520 first class passengers. Another feature of the electrical devices employed on the Dominion Monarch is the vegetable preparation room, in which is installed an electrical potato peeler. This will effectively peel 28 pounds of potatoes ?n five minutes. The butcher shop is fitted with the latest electrical mincers and meat slicers, while the chef’s larder is fitted with nests of cold cupboards, marble slabs and so on, for the preparation of all delicacies for the cold buffet.
