TODAY’S RECIPE
WHEY FLUFF
Make 4 cups of milk into a junket. When the junket is cold, cut into inch cubes and leave for an hour. Place in muslin and leave to drain for 24 hours. The watery substance left in the bowl is the whey, and can be used as follows; — 2 tablespoons gelatine. 1- cup cold water. 2 cups whey. , 2 stiffly-beaten egg' whites. J cup lemon juice. 1 tablespoon lemond rind. 1 cup finely-grated raw carrot. 2- cup sugar. Soak gelatine in cold water. Melt over hot water and add whey and sugar. Cool. When nearly set beat till frothy and very light. Add lemon juice, rind and carrot and beat thoroughly. Fold into stiffly-beaten egg whites. „, _ . TT SARAH.
