CHILLED BEEF

EXPORT TO LONDON NEW PROCESS OF CARRIAGE USE OF CARBON DIOXIDE GAS (Per United Press Association.) Auckland, January 8. A carbon dioxide gas process is to be used in carrying part of the shipment of 1100 quarters of chilled beef which is to be loaded at Auckland this week for London by the Blue Star Line steamer Sultan Star, from the Westfield freezing works.

The meat will form the first consignment of chilled beef sent from Auckland. It follows the very successful shipments, totalling nearly 1000 quarters, that were loaded at Wellington by Borthwick and Sons, Ltd., aboard the Commonwealth and Dominion Line steamer Port Fairy in February and June last. The second of these was said to be the first trial at sea of a process fiy which chilled meat is held in an atmosphere containing an excess of carbon dioxide with the object of retarding development on the surface mould and bacterial action generally. The experiment was reported to be an unqualified success and experts stated there was an entire absence of mould and it was the best shipment of chilled beef yet received in Britain from Australia or New Zealand. It is the conf fident belief that the chilled beef trade has come to stay. The Railway Department has co-operated in the experiment by providing seven special insulated vans. A further chilled beef shipment will be sent by the Avelona Star, due at Auckland about the end of this month.
