THE HAWERA TESTS.

To the Editor. Sir, —I read Mr Roger Gibb’s letter of about three weeks ago in which Mr Gibb dealt with the Hawera cheese experiment results. I have delayed replying because it was very obvious from Mr Gibb’s remarks that he was not fully conversant with the subject matter in the scientist’s report. To remedy that difficulty I have sent Mr Gibb’s a reprint of the report as it appeared in the Hawera Star. I feel sure that when Mr Gibb has read this report carefully, he will candidly admit that the Friesians have gained a great victory. To summarize the report:—Use of hightesting milk for cheese-making is economically unsound. Low testing herds should be used for milk for cheese factories. Friesian butter-fat makes 13 per cent, more cheese than Jersey butter-fat. In this connection I wish to emphasize the fact that “low-testing” does not mean low production of fat.
