DISEASED MEAT.
[to the editor.] Sir, — You will oblige me if you will kindly grant me space to make reference to the report of the Inspector of Slaughteryards, to the Levels County Council, as reported in your issue of yesterday’s date, as it reflects on a note I had in your paper last Friday. Before I go further, I may mention, that I have several practical witnesses who can to the accuracy of my statements. I have every confidence in the ability of the Inspector, so far as to seeing to the manner in which slaughter yards are kept, such as cleanliness &c., but when the consequences of what should not be present show themselves, then, I presume, his knowledge of morbid anatomy terminates, to give way to that of those who have made this subject their especial study, and have had to pay for their experience and diplomas, Reading old authors, one is curiously awakened by the methods advocated for sharpening the intellects of their representative bodies at times, one of which, as given by Ovid in his Metamorphoses, is to apply little pieces of onion to the eyes and mark the results.
