MARASCHINO, The delicious liqueur known as “Maraschino” is made of Seville oranges. The best time to make it is when the fruit is at its best, most plentiful, and cheapest. Take the rind of twelve Seville oranges, and that of five lemons, ‘ cutting it very thin as you peel the fruit. Add three pounds of loaf’sugar, pounded. Steep these ingredients in one imperial gallon, of best gin for four days and nights ; then strain it through muslin. Finally bottle ami cork securely. in a month’s time the liqueur may he tapped,- but it greatly improves by keeping. The oranges left after the peel is removed can be boiled down with sugar and made infro marmalade, which would be a clear jelly and, of "course, sweeter than the preserve with orange peel in it. Many recipes for marmalade allow the juice and the grated rind : of brie 1 lemon to every four pounds of oranges, and the juice of two sweet oranges to every pound of bitter ones.
