SOUPS TO SWEETS COLD WEATHER DISHES Now that the really cold wintry weather has arrived, with sharpened appetites, the thoughts of the housewife turn to dishes that are filling and warming KIDNEY SOUP. For this you require:— 1 small ox kidney or (i sheep’s kidneys. 1 onion. 1 quart stock. Chopped parsley. loz. flour. 2oz. boiled macaroni. 1 large teaspoon Worcestershire sauce. Lemon juice. Salt and pepper to taste. loz. butter or dripping. Skin the kidney, remove fat from centre and dice. " Dredg'e the' pieces with flour, pepper and salt, and brown them with the onion in the pot in which the butter or dripping has been heated. Add the stock and bring to the boil slowly, skim well and simmer for three-quarters to one hour. Add macaroni, which has been boiled in salted water, add sauce, and more salt and pepper if necessary. Lastly, just before serving, add a little lemon juice and chopped parsley. ROLLED STEAK lllb. steak. 2oz-. breadcrumbs. Pepper and salt. Herbs and parsley. 1 onion. loz. butter or dripping. Flatten the steak and shape for rolling. Mix the forsemeat, chopping the onion, parsley, etc. very fine. Spread a layer of forcemeat on the steak, roll it up and bind with twine. Lay it in a piedish with a cup of boiling water or stock, cover and bake for 40 minutes. Flavour and thicken the gravy and serve hot, with vegetables. RAISIN AND APRICOT PIE 1 cup seeded raisins. II cups cold water. 1J cups dried apricots. 2 tablespoons flour. Short or flaky paste. Soak the apricots overnight in water after washing well. Add raisins and cook for five minutes. Mix sugar and flour with a little cold water and stir into the mixture. Cover a pie plate with pastry and fill with the cooled mixture. Put strips of pastry over the mixture. Bake quickly for 10 minutes, then reduce heat and cook slowly for about 20 minutes longer. PIKELETS 1 egg. 1 small cup flour. J cup milk. 2oz. sugar. 1J teaspoons baking powder. 1 dessertspoon butter. Beat the egg well with the sugar, add the milk, then flour with baking powder, lastly the melted butter. Rub a hot element or girdle with well-greased white paper. Drop the batter from a teaspoon. Turn when little bubbles begin to rise. Have a good heat to cook quickly. CORNFLAKE COOKIES White of 3 eggs. 1 cup sugar. 3 cups cornflakes, teaspoon salt. 1 cup chopped nuts. Beat whites till stiff, add sugar, salt and cornflakes gradually, and lastly nuts. Put in small mounds on cold tray and bake in oven 200 deg., top off, bottom low, about one hour. PINK COCONUT SANDWICH 2 eggs. 4oz. sugar. 4oz. butter. 4oz. flour. 2oz. coconut. 1 teaspoon baking powder. Carmine to colour. Separate the yolks from the whites and beat the whites stiffly. Cream butter and sugar, add the yolks, and beat well, then the whites. Mix the coco-nut, flour and baking power together and add by degrees to the creamed butter, sugar, etc. Colour pink with the carmine. Put into two greased and floured sandwich tins and bake in a fairly quick oven. When cold put raspberry jam between and ice the top of the cake.
