(To the Editor of the Herajd.) Sir,—l am sending you a list of reduced prices for meat which I think may Interest your many readers. Since the control has been removed, English fat cattle and sheep have Jieen put up m price, but butchers refuse to* pay , the prices demanded so no sales of fats have taken place. New Zealand mutton i-e--l tail prices. I see Jn some butcher's shops are quoted 3Jd to 4d per lb. Yesterday, wtth the thermometer nearly 80, I saw New Zealand frozen mutton being -carted along Oxford street m an open van, with Ihe sun shining on part of the carcases. This sort of thing can be seen-any day. The meat gets semi-thawed during transit, and on delivery at shops is put m cold stores and chilled up again, with the resuit that the bloom has gone when the mutton is exposed for sale, and when cooked, the tissues" are dark and tlie meat tasteless. I have, failed fo find any South American mutton treated m this way. There seems .someone to care for South American meat, but there is none, to care for New Zealand mutton and * lamb. Shops often put placards bit inferior looking mutton and lamb, "Prime Canterbury"- or "Prime New Zealand." I heard a customer ,lell a butcher last week, Uiat "she liked New Zealand lamb, hut she did not like the English dirt on it."
