Cheese: Easier; 96s | to 975. j The Pahiatua Co-operative Dairy | Company (Scarborough Cheese Factory) this month paid out to ita 21 1 suppliers for butter fat received in 1 January, approximately £9OO, ppyI ment being at the rate of Is 3d per i lb. of butter fat. The average teet for the month was 3.9, which, is stated to be probably a district record for the month of January. The milk supply is keeping up very well, just on half tt ton of cheese being made dlailv. Good grades are being received, the last for a line of eight tons being 91 points. A good l deal of cream separated from the whey is heitv- manufactured into butter, which is said to be finding a very ready and increasing sale. The milk supply at the Rexdale (Mangamaire) cheese factory is being well maintained, the present daily intake of milk being slightly over 3000 gallons, from which 36 export cheeses are manufactured. Five vats are still in use. The quantity of cheese maniti factored to date is approximately 220 tons. The tests for the last: per Iml showed an increase, the highest being 4.3, while there were several 4.0 per cent, and upwards.
