MACARONI CHEESE
Put a saucepan of water on the fire. When it boils ?dd one teaspoonful of sat and a quarter of a pound of macaroni, which you have broken up into pieces about an inch long. When the macaroni is tender, drain off the water, and wash it in cold water, to prevent the pieces from sticking together. Melt loz of butter in a saucepan, stir in half an ounce of flour, mix smoothly, sdd half a pint of milk and a seasoning of Bait and pepper, or, if liked, cayenne, and one teaspoonful of m<ide mustard. Allow it to boil well, th:u put in the macaroni, an ounce and a-half of grated cheese. Well butter p shallow pie dish, put m the mixture, sprinkle the gifited cheese o\ - er it. put it in the oven for 10 or 12 minutes, till it turns a prJe brown.
