" Dairyman " and the Government Experts. TO THE EDITOR.
Bib, — It is to be regretted that the dairy industry should be checked and retarded in its rapid growth by the action of malicious and misinformed scribblers. Your correspondent " Dairymau," whose letter appears in your issue of 21st inst., begs several questions, but he makes his inquiries in such a manner that the general public must infer that he bases his questions on facts. "Dairyman" asks: "Is it correct that Mr John Sawers, dairy expert, was engaged at Wyndham and Stirling factories helping his brothers to make cheese for the winter show P If so, there is very little use other factories going to the trouble of preparing cheese should there be a show next winter." For the information of "Dairyman," I may state that Mr John Sawers has not been in the Stirling factory for a period of 18 months. "Dairyman" certainly pays a very high compliment to Mr John Sawers as an instructor when he admits that there is no use others competing, &c, &c. But "(Dairyman" is ridiculously inconsistent, as he relates that M John Sawers made a sad mess of some cheese at Edendale, &c, and condemned his own handiwork some little time afterwards. It is rather remarkable that "Dairyman " should be afraid to meet in open competition the pupils of such a blunderer. I am inclined to think that green-eyed jealousy and spite are at the bottom of ' ' Dairyman's " troubles. Had it not been that Mr John Sawers is in a defenceless position owing to the rules of the civil service, which prevent him from replying to letters in the public press, however cruel and malicious they may be, I would not have degraded my pen in answering " Dairyman." If "Dairyman" has the ordinary courage of a man, let him come out into the open day instead of sneaking behind the shelter of a 7io7)i de plume. The public will then be able to find out if he is a disappointed competitor at the late show.
