Omimi Dairy Factory.
Editor Witness,— Sir •. The report of the Omimi Dairy Factory Company as published in the Witness of July 20 is very nice, but I have a little difficulty which I would like to call attention to, and it is this : The output of cheese is stated to be 37 tons, and the cost of making it id per Ib. This would give only £173. Now the cheese maker was engaged for a year at a salary above that figure ; so what becomes of the assistant and the fuel and all the stuff that is required for manufacturing ? If the factory are only charging salaries lor the time the factory was, in active operation but have fco pay a yearly salary, such facts ought to be stated. I should certainly like to have a little more light on the matter than is afforded by the report before I can accept the statement that the coat of manufacture was. only §d per lb.— Yours. &c, Southland Faotqby.
