The following circular has been sent to all Dairy Coy ; by the Dairy Produce Board: — Sawdust m Butter Boxes— The Board has been for some time investigating, complaints from the trade re butter. damaged by sawdust having either entered the box during transport or before leaving the Dairy factory. . The arrival at definite conclusions as to the source of contamination is . -being found somewhat difficult. There appears to be evidence, however, that at least some of the sawdust and other dust is m the boxes before the butter is put my The Board would urge all factory managers to watch -the position closely. There is necessity not only for making certain that no sawdust is left m the boxes before being papered, but that the boxes should not be stored after papering where sawdust or any other dust can fall into, or be blown into - them. Every effort should be made to see that the 'butter is plated m a thoroughly clean package", and further, the greatest care should be exercised to avoid packages being soiled iv any , way during transport. "■■' Handling Cheese. Experiments have proved tWt rough handling jars the cheese is liable to fracture the inside of the ,-cheese, thus tending to make a cheese which crumbles when cut. The Board is of - the opinion that greater care should be exercised m% dealing with the cheese at all stages, viz., removing from hoops to curing -room, turning on the shelves, during waxing and crating, and m the handling bf crates from the time the cheese is crated until #nally marketed. They Board would appeal tp all factory managers and assistants '. to exercise . the greatest care at the factory, and to- do everything possible to have carriers load and unload the cheese carefully. The officers of the' Board are .doing everything possible to prevent sfough. handlinjg from grade stores to the market. • > Cheese Bandages.— Reports have reached the Board that retailers are complaining of \ the faulty , quality of tbV cheese bandage being used. This i 3 borne out by the experience of. Board members m some districts. The Board feels that the saving which can be made by using a cheaper and poorer cheese bandage is infinitesimal when compared with the possible losses which may accrue.
