DEVONSHIRE ROLY-POLY Half lb flour, fc teaspoon salt, 2 teaspoons baking powder, lib butter, about i teacup milk, J teacup golden syrup, 2 apples, juice and grated rind 1 lemon, 1 tablespoon picked sultanas, 2 tablespoons sponge cake crumbs. Sift flour, salt and baking powder into a basin. Rub in fat with finger tips. Mix to a dough with milk. Roll out on a lightly floured board into an oblong about 4 in thick. Place syrup in basin. Pare, core and chop apples. Add to syrup with lemon juice and rind, sultanas and cake crumbs. Spread this filling over dough to within Jin of the edge. Brush edges with cold water. Roll up like a bwiss roll. Press edges firmly together. Wrap in butterd paper. Steam for 2 hours. For six or seven persons. Serve with custard sauce.
