MODERN BREAD BAKERY EQUIPMENT
One of the most modern types of oven in the world for the baking of bread' is at present being installed in the bakehouse of Holsum Bakeries, in Dunedin. The oven had been on order from England for nearly four years and will be the fourth of its kind to be installed in New Zealand. In the new oven the dough is cooked by hot gases passing through DiDes
running throughout the huge seel construction. The oven is an oil burner, and the heat is controlled automatically throughout, so that each batch of bread is cooked at the same temperature as the previous one. There is no chance of any fire comingin contact with the bread. Besides saving about 15 minutes’ time on each batch of bread, the new oven cuts down the need for man-
power for it can be operated by one person. The oven can bake about 500 large loaves in an hour. It is expected that the new oven will be completed within the next few weeks, and will be ready to take over from the present type of ovens without a change from the present machinery for mixing and other tasks. The new oven is 33ft by 12ft 6in and stands lift high.
