TQMATO AND RICE PIE

Required: One pound of tomatoes, £ a teacupful of rice, a small onion, a pint of stock, loz of butter or good dripping, salt, pepper, and curry powder, about 3 tablespoonfuls of crumbs. Wash the rice. Put the stock and the onion, chopped up, in a saucepan on the fire, and when it boils put in the rice and let it cook until it has absorbed all the stock. Watch it carefully, for as it thickens it will burn very quickly. Butter a deep fireproof dish. Dip the tomatoes into bojling water for a second or two, then peel and slice them. Put them in layers with the partly-cooked rice in the dish; dust each layer with a little salt, pepper, and curry powder. Sprinkle a thick layer of crumbs on the top and put the rest of the butter in small pieces on it. Bake in a moderate oven until the grains of rice are quite tender, which will probably be in about three-quarters of an hour.

BANANA DELIGHT Allowing one large apple jor each person, dig centres out as you would when preparing for baked jipples. Mash two bananas into pulp with one dessertspoon of sugar and one good teaspoon of lemon juice. Press this mixture firmly into apples, place a piece of butter on top. Grease tin slightly with butter to prevent burning, and bake till apples are done. Beat egg white stiffly and place on top of each apple. Return to oven and slightly brown. Allow nearly one banana for each apple.
