LEEKS AND POACHED EGGS Six leeks, Jour eggs, toast, cheese sauce. Trim, off the roots of the leeks, the outer leaves and green ends, then wash well, splitting them if necessary. Tie in a bundle, put into boiling water (to which a desertspoonful of vinegar and a teaspoonful of salt have been added), anfl cook gently till tender (about 40 minutes). Have ready some cheese sauce, and two long pieces of hot toast. Drain the leeks thoroughly, then put 3 on to each piece of toast arranged down the centre of a hot dish. Keep hot while you quickly poach the eggs. Pour the cheese sauce over the leeks, put the eggs round and serve at once. BANANA BLANC MANGE* Take H pints milk, Ifoz cornflour, 1 lemon (rind only), 1 tablespobnful sugar, 3 bananas. Mix the cornflour to a smooth paste with some of the milk. Put the remainder into a saucepan, add the grated lemon rind and sugar. When hot, stir on to the cornflour. Return to the saucepan and bring to the boil, keeping it well stirred, then boil gently for a few minutes. Draw aside, stir in the sliced bananas , and pour into a wet mould. When set, turn out carefully.
