WHOLE WHEAT FLOUR

, TO THE EDITOR , Sib, —The study Mr Borton has given to the subject of whole wheat has evidently been fairly extensive. If his letters have been written with a genuine desire to further the use of whole meal, then I think they deserved to arouse more comment than they have done. In this, however, I feel that he will not be very disappointed. Both Mr Borton’s articles convince me that the thoughts which prompted them were directed against Mr Terry, but these he guardedly covered by a discussion, under the above heading. 1 am going to accuse him openly of something akin to jealousy. His letter on Saturday speaks of the “ pioneer- spirit,” but could a pioneer in the real sense show such pettishness as is contained in his last sentence? If I remember correctly, "Mr Terry’s last notes on white flour were written before he came to Dunedin, yet Mr Borton’s letters did not appear till after he had gone. He accused Mr Terry of not being strong enough in the condemnation of white flour for fear of being termed a “faddist,” but has Mr Terry not risked more in his outspoken dealings of other subjects? Mr Borton’s subject has, of course, a direct bearing on dietetics, and if he would gain more knowledge let him learn from one who knows his subject, whether he be an Aucklander or an Otagan, and if he has the interests of health at. heart I counsel friendly co-operation.—l am, etc., Wonder.
