TO THE EDITOR. Sir, —] thank “ Student ” and others for their contributions. I was not asking for information for myself, but tor a sinful public, because it is high time someone started a campaign on the allimportant subject of health. I hope to meet “ Student,” and first will ask him to confirm, if he can, the following remarks. I have read that the first endeavour of the millers of the present day •is to take out the whole of the seed germ (embryo), not so much because of the fat which it contains, but because this is the part of the grain which discolours and darkens the flour. In this embryo lie the phosphates which, needless to say, ■ are, from a dietetic point of view, a very necessary and important part of the grain Is this not so? 'I hope to see other students “ doing their bit,” and 1 am sure your columns will be readily opened to anyone who can-write intelligently on the subject. No one need write at great length. Letters must be short and deal with essentials if they are to be widely read, and if they are not widely read there is not much chance of arousing public interest. “ Student ” is indeed justified in saying “there is far too much sickness nowadays.” Think of it! There is no better country in the world, from a health point of view, than our own, and the original stock was sound and good. Our foodstuffs, properly used, cannot be bettered anywhere, and yet New Zealand is full of doctors and hospitals, chemists and quacks, cripples and “crooks.” Yes. ill-health will cause “ crooks ” as surely as it causes drunkards and suicides and mental patients. And what are we Otagans going to do about it? Sit back and see good Otago money paid to an Aucklander for doing our job? That’s not the spirit of the / pioneers!—l am, etc., Ivon A. Borton. ’
