Brown Scones. —Ingredients: Goz of flour, Jib of wheaten meal, half a teaspoonful of carbonate of soda, one teaspoonful of cream of tartar, 2oz of sultanas, pinch of salt, 3oz of butter, sour milk. Sieve the flour with cream of tartai and soda and salt. Rub butter in lightly, and use enough sour milk to form still dough, adding the fruit first. Knead well. Form into round and mark with knife into scones, and bake in hot oven 15 to 20 minutes. Raisin Cake.—lngredients: 11b of floui lib of butter or dripping; Jib of seedless raisins; Jib of granulated sugar, one teaspoonful of carbonate of soda, sour milk. Sieve flour and soda. Rub in fat. Add the sugar and fruit, and make into dough with about half a pint of sour milk. Turn into buttered cake tin and bake in moderate oven one hour. For a seed cake the method is the same, using dessertspoonful of caraway seeds, and 2oz of shredded candied peel instead of raisins.
