Wipe fish -with damp cloth ; split each down the back and remove bones, also the fins. Prepare a stuffing made with suet, breadcrumbs, savoury herbs and chopped parsley, and a little milk. Spread the inside of one fish with this, and put the fish on greased bakingtin and cover with the other. Cover the top thinly with brown crumbs, put a few bits of butter here and there, and bake in a moderate oven for about twenty minutes. Dish up and serve plain or with anchovy sauce.
