EGG POWDER.
TO THE EDITOK. Sir, —I read in your issue of Thursday an'article on tho use of egg powder in the various bakehouses. I for one having been in the employment of W. Wood, confectioner, Rattray street, for the last 13 years (nine years as a journeyman and four years as foreman), give this statement emphatio denial, as' during the whole of that time I have never used a substitute for eggs.
