Potato Omelette
THE following makes a substantial potato omelette for which only '1 eggs are required. Allow also 3 oz. freshly cooked and mashed potato, one quarter oz. fat or margarine. '2 dessertspoons milk and a seasoning of salt, pepper, and cavenae.
Put alt these ingredients except the fat into a basin and beat well with a fork". Make the fat hot in a frying-pan, pour in the mixture and fry quickly, turning it with a broad-Maded knife. Then fold it into an oral shape and let it brown lightly. If the flavour of cheese is liked, 1 oz. grated cheese may be added to the ingredients
