GOVERNMENT'S ACTIVITY CHEESE-MAKING PROBLEM / j Recent developments in the field of dairy research were discussed by tha Minister in charge of the DepartmaM of Scientific and Industrial Research, the Hon. D. G. Sullivan, in an interview upon his arrival in Auckland from" the South yesterday. The Minister Baid the work being carried out by the Dairy Research Institute, besides being of primary importance to the dairy industry itself, also held considerable importance for the consumer, who wiia' perhaps not sufficiently aware of tMf. value of the work being done for his, benefit. a The Minister said that, from report supplied to him, it appeared that in the past much difficulty had been experienced in cheese factories with starter* cultures used in the manufacture of cheese. These cultures often became inactive or died in an inexplicable way, thus causing delays and upsets in the manufacturing process. The Dairy search Institute had succeeded in isolating special active forms of starter' organisms which appeared to be less, subject to failure. - >v&
