MARZIPAN SANDWICH
Prepare a cake-tin about seven inches in diameter by lining it with a double thickness of greased paper. Next mako the marzipan mixture, as follows:—Rub together until well mixed four ounces of ground almonds, two ounces of castor sugar, and two ounces of icing sugar. Make into a stiff paste with a small ogg or half a largo egg flavoured with a few drops of lemon juice, almond essence and vanilla essence. Mako the cake mixture by creaming together four ounces of butter and four ounces of castor sugar. Add two beaten eggs and beat until creamy. Sift in fpur ounces of self-rais-ing Hour and add the grated rind of half a lemon. Spread half the mixture at the bottom of the prepared tin, then roll out tlio marzipan into a roll to fit the tin, put it in, and cover with the rest of tbe cake mixture. Bake in a moderate oven for about an hour and a quarter.
