SWISS POTATOES
.Variety in the serving of the potato is welcome in most homes, and Swiss potatoes are simple to prepare. First, pare and slice three large potatoes and place them in a fireproof dish.. Before placing them in the oven to cook pour over them half the following mixture: — Four ounces of melted butter, a dash of paprika, half a teaspoonful of salt, and one tablespoonful of lehion juice. Half cook the potatoes end then stir in the remainder of the butter mixture. Whip lightly and cook until tender and golden brown at the edges. Swiss potatoes ma;lr be served, sprinkled thickly with bro\vned grated cheese, as a simple supper dish.
