RABBIT ROLL.

Some people do not like rabbit. Others like it very much, and if the animal is freshly killed and young it can bo delicious. This is a change from rabbit pie, stewed braised or curried rabbit. Boil the rabbi* till tender with onion, carrots and a bunch of sweet herbs. When cooked so that the meat can be slipped off the bones, take from the pan and let it get cold. Cut into dice. Add a quarter of a pound of cold bacon chopped. Wet a large jam jar, decorate the bottom and sides with sHces of hardboiled egg and chopped parsley. Fill with the rabbit and bacon mixed together, after well seasoning it with salt, pepper, a pinch of allspice and a little chopped Reserve a few pieces of rabbit, season with salt and pepper and dissolve it in a little gelatine to make a sort of thick glaze. Pour this, while hot, over tho rabbit. Press all down into the jar. Put a weight on top. When quite cold, turn out and garnish as you wish.
