VICTORIA CAKES.
Whisk one egg. mix with it 2oz. fine sugar. Beat 2oz. butter to a cream, stir into it a large tablespoonful of ground rice, loz. currants and a few thin strips of candied peel, then add the egg and sugar and stir in a little flour (about loz.). Bake in patty-tins eight to ten minutes.
