HOW TO COOK BEETROOT.
Beetroots should bo put into boiling water to which a good lump of salt has been added. This helps to keep (hem a good colour. Before cooking, the top should be carefully wrung off not too near the beet, as if the skin is damaged in the slightest it will lose colour whilo cooking. Never cut the top with a knife, as this makes them bleed. The beetroots will skin more easily if put into cold water after cooking.
