Ihreequarter lb. plain flour, 5111. butler, Alb. brown sugar, 3111. currants, ylb. sultanas, £lb. seeded raisins (chopped), gib. candied peel, 2oz. almonds, four eggs, one gill sherry, cine teaspoonful baking powder, one teaspoonful mixed spice, 207.. crystallised cherries. Prepare tin with two or three thicknesses of brown paper; clean fruit, blanch and chop almonds, beat sift flour, baking powder and spice; beat butter and sugar to a cream; add and sherry; add flour and fruit alternately. Mix well, and turn info tin. Bake in a moderate oven three hours. Mix with hand. . . Two ounces almond meal does for icing the cake mixed with icing sugar and ;i little sherry; let, set, then ice with plain icing sugar mixed with sherry, and decorate with nuts or cherries.
