COCONUT CAKE.
The following is not an expensive cake and is very nice. Take 802, flour, two level teaspoonfuls baking powder, pinch of salt. soz. castor sugar, soz. butter or margarine, 3oz. shredded coconut, two eggs. Milk to mis.
Sieve the flour, salt and baking powder into a basin, rub in the butter or margarine with the tips of thsi fingers. Add the sugar and coconut. Mix ali these ingredients, make a well in the centre, stir in the beaten eggs and sufficient milk to make it of a fairly stiff consistency. Put into a well-greased cake tin and bake in a moderate oven for about one and a-half hours to one hour forty minutes. When cooked, cool on a cake tray and dredge with castor sugar.
