TO MAKE YEAST.
(By Request.)
To four cups of raw potatoes cut in pieces, add 12 cups of water and a large handful'°f loose hops (tied in muslin). *»oil together till the potatoes are quite mashed up. Take from the'fire, remove he hops, and add a cup of sugar and a andful of salt Pass through a sieve and leave till cooled. Add half cup of flour rubbed smooth in some of the liquid. When luke warm add one cup of old yeast, set in a warm place all night, remove the scum ;and bottle. Keen in a coo! dry p i ace . Ifc is ready for * use next day, and will keep for a month. -It you have no old yeast to put in, it will have to stand a day or two before becoming fit for use. It is well to have the old yeast for rising.
