The "Omelette Queen " of France, the famous Mother Poulard, of Mont St. Michel, recently died at the age of 80. Her recipe made the Mont St. Michel omelette famous the world over. Mme. Poulard opened her restaurant in 1875, when tourists were few and far between, and quickly won fame. Various reasons have been given for the excellence of her omelettes.
