RESEARCH INTO WHEAT.

TESTS FOR BAKING VALUE,

[BY TELEGRAM. —OWN CORRESPONDENT. ]

"WELLINGTON, Tuesday

In his report to the last meeting of tho Council of Scientific and Industrial Research, the chairman, Mr. G. Shirtcliffe, said a very large number of samples of grain was being milled, chemically examined, and suDmitted to baking tests. Between 4000 and 5000 separate field trials had been harvested at Lincoln College. and tho results of selection and breeding were now being critically examined. An instrument which gives a rapid approximate idea of the quality of _ resultant flour, where only small quantities of grain were available, had been tried .with promising results. One result of treating seed wheat with hot water for smut prevention seemed to be to increase tho baking score of flour made from tho succeeding crop, while present indications were tnat leaving the wheat until it is dead ripe did not affect either the flour yield or its (juality. Arrangements were in hand for investigating the production of feed wheat in both islands, and for the growing of high grade, but possibly low-yielding, wheat on lighter lands.
