SPINACH WITH EGGS.

Put 21b of spinach into a pan of cold water to cover*' and add a little salt. Bring to the boil, and cook until tender. Strain, rinse and press dry. Rub through a sieve and return to tho saucepan, with one teaspoonful of flour, loz. of butter, and two tablespoonfuls of "cream or milk. Dish in a circle, and fill in tho centre with eggs/that have been boiled for four minutes and then shelled. Pour a little slightly-thickened gravy over tho eggs and garnish tho dish with croutons of fried bread.
