SCOTCH SHORTBREAD.

Scotch shortbread is always a treat, but other peoplo can make it, too. Here is an economical recipe for it: Mix together of flour, and ilb. of white sugar. Then rub in loz. of butter and 3oz. of dripping, or margarine. No baking powder is needed, but a good deal of patience is, because the fat and dry ingredients. must be thoroughly mixed, and this takes a long time! Roll out fairly thin on a board, cut with a small, round cake cutter, and prick each round all over. The secret of success with shortbread is to bake it in a very slow oven.
