SUPPLIES OF OYSTERS.
OPENING OF THE SEASON.;
QUESTION OF STORAGE^
A slock of oysters to irieefc the opening day demand on Thursday is being gradnally built up at the Government store in Market Place. Tho first , supplies reached the store last Wednesday and up to Saturday over 100 sacks had been received, Tho oysters are stored in an iron shed, much in the same manner as are sacks of grain or potatoes. "Oysters will keep fot well over a •week in cool weather without treatment and there is no danger to public health in the fact that some of tho oysters which will be sold next Thursday will have been stored for a week or more," said Dr. T. J. Hughes, medical officer of health, yesterday.
A restaurant keeper who handles larga quantities of oysters agreed with Dr. Hughes concerning their koeping qualities, but emphasised that they must be kept in a cool place. "It is all right in one way to build up a stock, but oysters aro more appetising when they are fresh, and, in my opinion, they should be mada availablo as soon as they are received," ho said.
