HONEY CAKES.
Take.lib., honey, 41b. butter,-lib flour (plain),; a" pinch %of salt,"" ill). < ground almonds, a pinch of ground cloves, grated ' rind" of half a lemon, '}oz. carbonate of soda. 'Sieve'tho flour, salt, carbonate of soda, and'ground cloves into a basin. Add the almonds • and' lemon rind, arid make a 1 well. iu the centre. Melt the butter and 4 honey in a lined saucepan, and pour into tho. centre of ingredients. Mis together until thoroughly blended, and cover the basin. Allow the mixture to stand all night. Next day sprinkle the paste with a little flour, and turn out on to pastry board. Flour a rolling pin and roll tho paste to Jin. in thickness; cut in small cakes and place them on a greased and floured tin. Brush over with slightly beaten white of egg and sprinkle with chopped almonds. Bake in a moderate oven until tho cakes ara firm and lightly browned.
