POMMES DAUPHIN.
This is a delightful way of cooking potatoes. Make a paste with boiled potatoes and boiling milk, about, 2oz. of butter and-2oz. of flour. Add two eggs well beaten and cook the paste i:i a frying pan until it is a nice golden brown on top. If you want to serve the potatoes in a more decorative way, take a spoon and put little blobs of the paste in the frying pan, cooking them apart. They should turn out in the shape of dried figs.
