CAULIFLOWER AND BEETROOT SALAD.
One cauliflower, one beetroot, one egg, Jib. cream cheese, cream "dressing. Boil the cauliflower, boil or bake the beet,toot. Leave until cold. Then divide (he cauliflower into small sprigs and cut the beetroot into match-stick strips.. Roll the cheese into small round marbles. Boil the egg hard. Chop the white and rub the yolk through a sieve. Make a border of the sp 'igs of cauliflower on a dish or in a glass bowl. Fill th/> centre with beetroot strips mixed with,the cheese balls and chopped egg while? Pour the dressing over all and sprinkle with the egg yoke, and you have a fascinating supper dish.. To make the dressing:—Stir the yolk of an egg vigorously while you add ono large tablespoonful of oil drop by drop. Then stir in a tablespoonful of thick cream, add by degrees a teaspoonful of vinegar, and a pinch of salt and pepper. Then use just bofore the dish is to be served.
