TO PRESERVE PASSION-FRUIT.
To every cup of passion-fruit pulp allow about half a cup of No. lA. sugar, jilix these well together. Place pan on fire and stir occasionally, until the mixture reach?* boiling point. Let get quite cold. Fill bottles nearly to the ton. -If uSing screw-tops place on rubber rings and tops. Do not screw down. Stand bottles on a tin in a pan of cold w;Her, the water to reach to the neck of the bottles, and bring water slowly to 185 degrees, or below boiling point. Put lid on pan. Leave at 185 degrees for three hours. Take out boltles, and screw down immediately; or, if using corks, cork immediately. Make suro that "bottles in air-tight. When quite cold dip corked bottles in melted resin. Note. —There is a good deal of life in die passion-fruit seed, hence the long cooking. Delicious for fruit salads.
